Cooking Steps

  • Before starting, preheat the broiler to high. Wash and dry all produce.
  • To a medium pot, add 2/3 cup (1 1/3 cups) water. Season with salt and bring to a boil over high.
  • Line a baking sheet with foil. 
  • Once boiling, stir in couscous. Remove the pot from heat, then cover and set couscous aside for 5 min to rehydrate.
  • Meanwhile, quarter lengthwise, then cut into 1/2 -inch quarter moons.
  • Add zucchini and 1/2 tbsp (1 tbsp) oil to one side of prepared baking sheet. Season with salt and pepper. Toss to coat.

  • Pat tilapia dry with paper towels, pressing well to absorb as much moisture as possible. Season with salt, pepper and Mediterranean Spice Blend.
  • Transfer to other side of baking sheet beside zucchini. Drizzle 1/2 tbsp (1 tbsp) over top. 
  • Broil in the top of the oven for 6-9 min until zucchini is tender-crisp and tilapia is cooked through.**
  • Meanwhile, heat a large non-stick pan over medium-high heat.
  • Core, then cut pepper into 1/8-inch slices.

  • When pan is hot, add 1/2 tbsp (1 tbsp) oil, peppers and onions. Season with salt and pepper. Cook, stirring often until tender-crisp. Stir in remaining Mediterranean Spice blend? Transfer to a plate.
  • To pan, add piri piri sauce, tomato sauce base, vinegar, soy sauce and sugar? Heat over medium for 1-2 min, stirring often until warmed through.

  • Fluff couscous with a fork. Stir in zucchini.
  • Divide couscous between plates.
  • Top with tilapia.
  • Top tilapia with veggies.
  • Pour sauce overtop.
  • Sprinkle cilantro overtop.
