Cooking Steps

Prep and line dish

  • Before starting, preheat the oven to 350°F.
  • Grease an 8x8-inch metal baking dish.
  • Line the base and sides of the dish with parchment paper, pressing down to adhere. (NOTE: Leave a 2-inch overhang on the sides of the dish. This helps to easily remove blondies once cooled.)
Make blondie batter

  • In a small bowl, melt butter in the microwave (you can also melt in a small pot over medium, if you like).
  • Remove from heat and transfer butter to a large bowl. Add brown sugar and 4 tbsp maple syrup, then whisk to combine. Add egg, 1/4 tsp salt, 1/2 tsp baking powder and whisk again to combine.
  • Add flour and stir with a spatula until combined. 
  • Add pecans and stir with a spatula until combined. 
Bake blondies

  • Add blondie batter to the pan and spread evenly, using the back of a spoon or spatula.
  • Bake for 20-25 min in the middle of the oven, until golden, puffed up in the middle and a toothpick inserted into the centre comes out clean.

  • Once blondies are baked, transfer pan to a wire rack to cool completely.
  • While blondies cool, in a small pot, melt white chocolate chips over medium-low for 2-3 min, stirring constantly, until mixture is smooth and glossy. (TIP: You can also melt chocolate in the microwave, if you like.)
  • Whisk in remaining maple syrup. 
  • Spread white chocolate-maple glaze over cooled blondies. 
  • Sprinkle with sea salt from your pantry, if you like.
  • Cut blondies into squares.
