
We love the idea of enjoying a dinner that is completely comforting and delicious. Buttery buns complement the saucy and richness of our sloppy joe filling. Paired with roasted rosemary carrots, for a healthy twist, dinner tonight is a totally throwback!

Preheat oven to 425°F (to roast the carrots). Start prep. when oven comes up to temp! KIDS TIP: If kids prefer regular carrot sticks, serve them raw or toss half the carrot sticks on one side of the foil-lined baking sheet, with a drizzle of oil. Season with salt and pepper. Continue roasting as directed.
Wash and dry all produce.* Strip the rosemary leaves from the stems and finely chop 4 tsp. On a foil-lined baking sheet, toss the carrots with half the brown sugar, 2 tsp rosemary and 2 tbsp oil. Season with salt and pepper. Roast in the centre of the oven, tossing halfway through cooking, until golden-brown and tender, 30-32 min.

Meanwhile, heat a large non-stick pan over medium-high heat. When the pan is hot, add 1 tbsp oil, then the onions. Cook, stirring occasionally, until softened, 2-3 min. Add the beef, sloppy joe seasoning and remaining rosemary. Cook, breaking up the beef into smaller pieces, until no pink remains, 6-7 min. (TIP: Cook to a minimum internal temp. of 71°C/160°F.**)

Remove the pan from the heat and carefully discard the excess fat. Return the pan to the heat, then add the diced tomatoes, ketchup and remaining brown sugar to the same pan. Season with salt and pepper. Bring up to a boil, then reduce the heat to medium-low. Cook, stirring occasionally, until the beef mixture is slightly thickened, 6-7 min.

When the carrots are golden-brown and tender, remove the baking sheet from the oven and transfer the carrots to a plate. Turn the oven to broil. Cut the buns in half. Remove the foil from the same baking sheet and place the buns on the baking sheet, cut-side up.

Toast the buns in the centre of the oven until golden-brown, 2-3 min. (TIP: Keep your eye on them so they don't burn!)

Divide the beef mixture between buns. Serve the smoky sloppy joes with the roasted carrots on the side.
