Cooking Steps

  • Grease an 8x8-inch baking dish with 2 tsp softened butter.
  • Peel, core, then cut apples into 1/2-inch pieces.
  • Juice lemon.
  • Mix oats, flour, pecans, 4 tbsp brown sugar, 1/2 tsp cinnamon and 1/8 tsp salt together in a medium bowl. Add softened butter, then combine with your fingertips until mixture is crumbly but holds together when squeezed.

  • Add apples, 1/2 tbsp lemon juice, 2 tbsp brown sugar and remaining cinnamon to the greased baking dish. Toss to combine and apples are coated in sugar mixture.
  • Scatter crumble mixture over top.
  • Bake in the middle of the oven until golden-brown and fragrant, 25-30 min.

  • Meanwhile, stir together greek yogurt and remaining sugar, if desired, together in a medium bowl until combined.
  • Remove apple crumble from the oven and transfer to a wire rack to cool slightly, 2-3 min.
  • Divide greek yogurt between bowls, then divide apple crumble mixture overtop.
  • Any leftover apple crumble can be stored in an airtight container and refrigerated for up to 3 days.
