Cooking Steps

Prep

  • Before starting, preheat the broiler to high.
  • Wash and dry all produce.
  • Halve buns. Arrange on an unlined baking sheet.
  • Thinly slice green onion.
  • Cut cucumbers into 1/4-inch rounds.
Make coleslaw

  • To a large bowl, add mayonnaise, vinegar, half the Gochujang and 3/4 tsp (1 1/2 tsp sugar). Season with salt and pepper, then whisk to combine. 
  • Add coleslaw mix and half the green onions, then toss to combine. 
Cook beef

  • In a large non-stick pan, heat 1/2 tbsp (1 tbsp) oil over medium-high.
  • When hot, add beef. Cook for 3-5 min, breaking up beef into smaller pieces, until no pink remains.** Carefully drain and discard excess fat.
  • Add Asian Sesame Blend, ginger sauce, 2 tbsp (4 tbsp) water and remaining gochujang. Cook for 1 min, stirring often, until fragrant and sticky. Season with salt and pepper.
  • Remove the pan from heat, then stir in remaining green onions. 
Toast buns

  • Meanwhile, broil buns for 3-4 min, until golden. (TIP: Keep an eye on them so they don't burn!)
Finish and serve

  • Stack half the cucumbers, then beef mixture and half the coleslaw on bottom buns. Close with top buns.
  • Divide sandwiches between plates.
  • Serve remaining slaw and cucumbers on the side.
