Cooking Steps

  • Cut potatoes and sweet potatoes into 1/2-inch pieces.
  • Add potatoes and 1 1/2 tbsp oil (dbl for 4 ppl) to an unlined baking sheet. NOTE: For 4 ppl, use 2 baking sheets, with 1 1/2 tbsp oil per sheet.) Season with half the garlic salt and pepper, then toss to coat.
  • Roast in the bottom of the oven, flipping halfway through, until tender and golden-brown, 20-22 min. (NOTE: For 4 ppl, roast in the bottom and top of the oven, rotating sheets halfway through.)

  • Trim green beans, then cut into 1-inch pieces.
  • Combine half of the BBQ sauce and mayo in a small bowl.

  • Pat salmon dry with paper towels, then season with remaining garlic salt and pepper.
  • Arrange salmon on a parchment-lined baking sheet. Spread remaining BBQ sauce over salmon.
  • Roast in the middle of the oven until cooked through, 7-10 min.**

  • Meanwhile, heat a large non-stick pan on medium-high heat.
  • When hot, add butter. Swirl the pan until melted, 30 sec.
  • Add beans and corn. Season with salt and pepper. Cook, stirring occasionally until veggies are softened and lightly charred, 5-6 min.

  • Mix roasted veggies to pan with corn and green beans.
  • Divide veggies and salmon between plates.
  • Drizzle BBQ-mayo sauce over veggies.
