Cooking Steps

Prep

  • Before starting, preheat the oven to 475°F. Wash and dry all produce.
  • Core, then cut pepper into 1/2-inch pieces.
  • Peel, then cut half the onion into 1/2-inch pieces (use whole onion for 4 servings).
  • Peel, then finely mince or grate garlic.
  • Drain olives, reserving brine, set aside. Roughly chop olives.
Prep chicken

  • Pat chicken dry with paper towels.
  • To a large bowl, add chicken, half the garlic, 1 tbsp (2 tbsp) oil and half the Mediterranean Spice Blend. Season with salt and pepper. Toss to combine.
Bake chicken

  • To the aluminum tray, add chicken. Roast in the bottom of the oven for 6-8 min.
  • After 6-8 min, add peppers, onions, olives, remaining Mediterranean Spice Blend and 1 tbsp (2 tbsp) oil. Season with salt and pepper. Carefully stir to combine.
  • Continue roasting for 6-8 min, until chicken is cooked through.**
  • Turn the broiler to high. 
  • Carefully place the tray in the top of the oven and broil for 3-4 min, until golden. (TIP: Keep an eye on it so it doesn't burn!)
Make garlic-mayo

  • Meanwhile, to a small bowl, add mayo, remaining garlic, 1/8 tsp (1/4 tsp) sugar, 1/4 tsp (1/2 tsp) reserved olive brine and 1/2 tbsp (1 tbsp) water. Season with pepper. Stir to combine.
Finish and serve

  • Massage the pouch of rice to separate grains.
  • Heat rice in the microwave for 2 min, as indicated on the back of the package. (NOTE: If you don’t have a microwave, stir-fry rice in a hot non-stick pan with a splash of water for 3 min, until heated through.)
  • Divide rice between bowls.
  • Top with chicken-veggie bake. Spoon any tray juices over top.
  • Drizzle garlic-mayo over top.
