Cooking Steps

  • Before starting, wash and dry all produce.
  • Thinly slice green onions, keeping greens and whites separate.
  • Thinly slice mushrooms.
  • Cut bok choy into 1/2- inch pieces. (Rinse bok choy leaves to wash away any dirt.)
Cook beef and mushrooms

  • Heat a large pot over medium-high heat.
  • When hot, add 1/2 tbsp (1 tbsp) oil, beef, mushrooms, green onion whites and brown sugar. Season with salt and pepper. Cook, for 4-6 min, stirring often until veggies are tender and beef is cooked through.**
  • Add soy-mirin blend. Cook for 30 sec, stirring often until fragrant.

  • Add stock powder and 3 cups (6 cups) water. Bring to a boil over high heat.
  • Once broth is boiling, add carrots, bok choy and udon.
  • Cook for 2-3 min, using tongs to separate noodles, until veggies and noodles are tender. PLS CONFIRM
  • Season with salt and pepper.

  • Divide noodles and broth between bowls.
  • Sprinkle crispy shallots and remaining green onions overtop.
