Cooking Steps

Prep
1
  • Before starting, wash and dry all produce.
  • Peel, then cut shallot into 1/2-inch slices.
  • Peel, then mince or grate garlic.
  • Pat tilapia dry with paper towels, then cut into 1 1/2-inch pieces. Season with salt and pepper.
Cook shallots and garlic
2
  • Heat a large pot over medium-high.
  • When hot, add 1 tbsp (2 tbsp) oil, then shallots and garlic.
  • Cook for 1-2 min, stirring occasionally, until softened.
  • Season with salt and pepper.
  • Add white cooking wine and cream cheese. Cook for 30 sec, stirring often, until liquid is reduced by half and cream cheese is melted.
Cook pasta
3
  • To the pot, add 3 cups (6 cups) water, 1/4 tsp (1/2 tsp) salt and 1/8 tsp (1/4 tsp) pepper.
  • Stir to combine. Bring to a boil over high.
  • Once boiling, stir in linguine and reduce heat to medium.
  • Simmer, uncovered, for 11-14 min, stirring often to prevent sticking to the pot, until linguine is tender. (TIP: If pasta sticks too much, add more water, 1/4 cup at a time. Scrape up any pieces stuck to the bottom of the pot.)
Cook tilapia
4
  • Meanwhile, roughly chop spinach.
  • Once linguine is tender, add tilapia to the pot. Cook for 2-3 min, stirring occasionally, until tilapia turns opaque and is cooked through. **
Finish pasta
5
  • Remove pot with linguine from heat, then add spinach, Alfredo Sauce and 1 tbsp (2 tbsp) butter.
  • Stir for 1 min, until spinach wilts and butter melts. Season with salt and pepper.
Finish and serve
6
  • Divide pasta between bowls.
  • Sprinkle Parmesan cheese over top.
7

If you've opted to get tilapia, cut into 1 1/2-inch pieces, then cook in the same way recipe instructs you to cook shrimp.**
