Cooking Steps

  • Before starting, wash and dry all produce.
  • Thinly slice mushrooms.
  • Cut bok choy into [1/2-] inch pieces. (Rinse bok choy leaves to wash away any dirt.)

  • Heat a large pot over medium-high heat.
  • When hot, add 1/2 tbsp (1 tbsp) oil, beef, mushrooms, onions and brown sugar. Season with salt and pepper. Cook, for 4-6 min, stirring often until veggies are tender and beef is cooked through.**
  • Add soy-mirin blend. Cook for 1-2 min, stirring often until fragrant.

  • Add broth concentrate and 3 cups (6 cups) water. Bring to a boil over high heat.
  • Meanwhile, place noodles in a colandar. Using scissors, make a few cuts in the noodles.
  • Rinse noodles under warm water to remove excess starch/
  • Using hands, separate noodle strands to loosen noodles.

  • Once broth is boiling, add carrots, bok choy and noodles.
  • Cook for 2-3 min, stirring often until noodles and veggies are tender.

  • Divide noodles and broth between bowls.
  • Sprinkle crispy shallots overtop.
