  • Core, then cut pepper into 1/4-inch slices.
  • Thinly slice green onion, keeping the white and green parts separate.
  • Add oyster sauce, soy sauce and 1 tsp sugar to a small bowl, then stir to combine.
Cook veggies and pork

  • Heat a large non-stick pan over medium-high heat. When hot, add 1 tbsp oil, then pork, green onion whites and peppers.
  • Cook, breaking up pork into smaller pieces, until no pink remains, 4-5 min.** Carefully drain and discard excess fat. Add Moo Shu spice blend and cook, stirring often, until fragrant, 1 min. 
  • Transfer pork and veggies to a bowl and cover to keep warm.
Cook noodles

  • Add noodles to the boiling water. Cook uncovered, until tender, 1-2 min.
  • Reserve 1/3 cup noodle water, then drain noodles. Rinse noodles under warm water.
  • Drain well, then return to the large pot.
Finish and serve

  • Reheat the same pan (from step 2) over medium heat, then add peanut butter, reserved noodle water and oyster sauce mixture. Whisk to combine until mixture is smooth, 1 min. 
  • Immediately pour sauce into the pot with the noodles. Add pork and veggies to the pot, then toss to combine.
  • Divide noodles between plates or bowls.
  • Sprinkle remaining green onions and peanuts over top.
  • Drizzle sriracha over top, if desired.
