- Cut potatoes into 1/4-inch rounds.
- Add potatoes and 2 1/2 tbsp oil to a parchment-lined baking sheet. Season with garlic salt and pepper, then toss to coat.
- Roast in the bottom of the oven, flipping halfway through, until tender and golden-brown, 28-30 min.
- Meanwhile, thinly slice green onions.
- Cut bacon into 1/4-inch pieces. (TIP: Use kitchen shears to cut bacon with ease!)
- Heat a medium non-stick pan over medium heat.
- When hot, add bacon. Cook, flipping occasionally, until crispy, 7-8 min.**
- Remove the pan from heat. Using a slotted spoon, transfer bacon to a paper towel-lined plate. Set aside.
- When potatoes are done, remove from the oven, then sprinkle cheese over top.
- Return to the middle of the oven and roast until cheese melts, 1-2 min.
- Combine sour cream and 2 tsp water in a small bowl.
- Drizzle sour cream over potatoes, then sprinkle bacon and green onions over top.
- Serve loaded baked potato bites directly on the baking sheet.
