Cooking Steps

Cook rice and prep

  • Before starting, preheat the oven to 450 °F. Wash and dry all produce.
  • To a medium pot, add 1 1/4 cups (2 1/2 cups) water, half the Moo Shu Spice Blend and 1/8 tsp (1/4 tsp) salt. Cover and bring to a boil over high.
  • Using a strainer, rinse rice until water runs clear.
  • To the boiling water, stir in rice, then reduce heat to low. Cover and cook for 13-15 min, until rice is tender and water is absorbed. Remove from heat. Set aside, still covered.
  • Cut broccoli into bite-sized pieces.
  • Peel, then mince or grate garlic.
  • Thinly slice green onions.
Make meatballs

  • Line a baking sheet with parchment paper.
  • To a large bowl, add beef, remaining Moo Shu Spice Blend, soy sauce, half the garlic and panko. Season with salt and pepper, then combine. 
  • Roll mixture into 8 (16) equal-sized meatballs.
Cook meatballs

  • On the prepared baking sheet, arrange meatballs on one side.
  • To the other side, add broccoli and 1 tbsp (2 tbsp) oil. (NOTE: For 4 servings, use 2 baking sheets, dividing meatballs and broccoli evenly between both sheets). Season with salt and pepper, then toss to coat.
  • Roast in the middle of the oven for 10-12 min, or until browned and cooked through.** (NOTE: For 4 servings, bake in the middle and bottom of the oven, switching sheets halfway.)
Toast sesame seeds

  • Heat a large non-stick pan over medium.
  • When hot, add sesame seeds to the dry pan. Toast for 3-4 min, stirring often, until golden. (TIP: Keep your eye on them so they don't burn.) 
  • Transfer to a plate.
Finish meatballs

  • Reheat the same pan over medium. Add ginger sauce, remaining garlic, tomato sauce base and 1/4 cup (1/2 cup) water.
  • Cook for 1-2 min, stirring often, until thickened.
  • To pan with sauce, add meatballs and 1 tbsp (2 tbsp) butter. Cook over medium-low for 1-2 min, stirring occasionally, until meatballs are coated. Season with salt and pepper.
Finish and serve

  • To the rice, add half the sesame seeds and half the green onions, then fluff with a fork.
  • Divide rice, broccoli and meatballs between bowls.
  • Spoon remaining sauce from pan over meatballs.
  • Sprinkle remaining sesame seeds and green onions over top.
