
Kids' Deep Dish Pizza Cups

Pizza for lunch is always a good idea, especially when it comes in a handy, bite-sized form! These deep dish pizza cups are oozing with melted cheese and sweet marinara for a tasty hot lunch both kids and parents can enjoy.

Before starting, remove pizza dough from the fridge and rest in a warm spot for 20 min. Preheat the oven to 475°F. Wash and dry all produce. Lightly flour a clean work surface. Divide dough into 8 equal pieces, then roll each piece into a ball. Cover with a kitchen towel and let rest for 10 min. Meanwhile, grease 8 cups of a muffin tin with 1 tbsp oil. (TIP: You can also spray each cup with oil if you prefer!) Peel, then halve carrot crosswise, then cut into 1/2-inch sticks. Trim snap peas.

Flatten each dough ball with the palm of your hand then, using a rolling pin, roll into a 3-inch-wide circle. Press one piece of dough into the base and sides of a muffin tin cup to create a dough cup. Repeat with remaining dough pieces. (TIP: Make sure you press the dough down firmly into the bottom of each cup so the dough stays put!) Spoon 1 tbsp marinara into the bottom of each dough cup. Sprinkle cheese over top. Bake in the middle of the oven until golden-brown around the edges, 10-12 min.

Meanwhile, add sour cream, mayo and 1/2 tsp Dill-Garlic Spice Blend to a small bowl. Season with salt and pepper, then stir to combine.

Place muffin tin on a wire rack to cool for 2-3 min, then carefully run a sharp knife around the edges of the cup to release pizza cups. Divide deep dish pizza cups, carrot sticks and snap peas between plates. Serve ranch alongside for dipping.
