Cooking Steps

Prep potatoes and roast wedges

  • Before starting, preheat the oven to 450°F. Wash and dry all produce.
  • Remove any brown spots from potatoes, then cut into 1/2-inch wedges.
  • To parchment-lined baking sheet, add potatoes, 1 tbsp oil and half the Indian Spice Blend (NOTE: For 4 servings, use 2 baking sheets, with 1 tbsp oil per sheet.) Season with salt and pepper, then toss to coat. 
  • Roast in the middle of the oven, flipping halfway through, until golden-brown, 25-28 min.(NOTE: For 4 servings, roast in the middle and top of the oven, rotating sheets halfway through.)
Finish prep

  • Meanwhile, core, then cut pepper into quarters. 
  • Roughly chop cilantro.
  • Halve one cucumber lengthwise, then cut into 1/4-inch half moons.
  • In a small bowl, grate remaining cucumber. Sprinkle 1/4 (1/2) tsp garlic salt over grated cucumber and stir to combine. Set aside.
Roast peppers

  • To a small bowl, add peppers. Season with salt, pepper and 1/2 tbsp of oil. Toss to combine.
  • Once potatoes are halfway done and flipped, add peppers to the baking sheet. Cook for 10-12 mins, until peppers are tender and wedges are golden-brown.
Form patties

  • Meanwhile, in a large bowl, combine beef, panko, half the cilantro, remaining garlic salt and remaining Indian Spice Blend.
  • Form mixture into 2 (4) 4-inch-wide patties. (NOTE: Your mixture may look wet, this is normal!)
Cook patties and make raita

  • Heat a large non-stick pan over medium.
  • When hot, add 1/2 tbsp (1 tbsp) oil, then patties. Pan-fry until golden-brown and cooked through, 5-6 min per side.**
  • Drain any liquid from grated cucumber.
  • Add yogurt, remaining cilantro and 1/4 (1/2) tsp sugar to the bowl with grated cucumber. Season with salt and pepper, and stir to combine. (NOTE: This is your raita!)
Finish and serve

  • Halve buns.
  • Arrange on an unlined baking sheet, cut-side up. Toast buns in top of the oven, 3-4 min until golden. (TIP: Keep an eye on buns so they don't burn!)
  • Spread 1 tbsp (2 tbsp) raita over top buns. Stack spring mix, patties, peppers and sliced cucumbers on bottom buns. Close with top buns.
  • Divide burgers and wedges between plates.
  • Serve remaining raita on the side for dipping.
