Cooking Steps

Roast potatoes

  • Before starting, preheat the oven to 450˚F.
    Wash and dry all produce.
  • Remove any brown spots from potatoes and cut into 1/2-inch wedges.
  • To a parchment-lined baking sheet, add potatoes, half the Lemon-Pepper Seasoning and 1 tbsp (2 tbsp) oil. Season with salt, then toss to coat. 
  • Roast in the middle of the oven for 22-25 min, flipping halfway through, until tender and golden.**
Make feta sauce

  • Meanwhile, to a small bowl, add yogurt sauce, half the white wine vinegar and 1 tbsp (2 tbsp) feta. Season with pepper, then stir to combine.
Prep meatballs

  • To a large bowl, add ground beef, breadcrumbs, broth concentrate, remaining Lemon-Pepper Seasoning and 1/4 tsp (1/2 tsp) salt, then combine. 
  • Add remaining feta, then gently mix.
Roast meatballs

  • Roll mixture into 8 (16) equal-sized meatballs.
  • Transfer to another parchment-lined baking sheet.
  • Roast in the top of the oven for 12-14 min, until cooked through.**
Make salad

  • Meanwhile, cut tomato into 1/2-inch pieces.
  • Slice cucumber into 1/4-inch rounds.
  • To a large bowl, add Dijon, remaining white wine vinegar and 1 1/2 tbsp (3 tbsp) oil. Season with salt and pepper, whisk to combine.
  • When meatballs and potatoes are done, add spring mix, cucumbers and tomatoes to the large bowl with dressing. Toss to combine.
Finish and serve

  • Divide potatoes, meatballs and salad between plates.
  • Serve feta sauce alongside for dipping.
