Before starting, preheat your broiler to high and wash and dry all produce. Strip 2 tbsp thyme leaves (dbl for 4 ppl) from the stems. Peel, half, then slice the onions. Peel, then mince the garlic. Pat the beef dry with paper towels. Cut into bite size pieces.

Heat a large pot over medium-high heat. When hot, add 1 tbsp oil (dbl for 4ppl), then beef. Cook, stirring often, until browned, 4-5 min.** Season with salt and pepper. When beef is done cooking, transfer to a large bowl and set aside.

Add 2 tbsp butter (dbl for 4ppl) and swirl to melt in the same pot. When melted, add onions and half the thyme. Cook, stirring occasionally, until onions soften, 5-7 min. Sprinkle over flour and garlic. Cook, stirring often, until onions are coated, 1-2 min.

Add broth concentrates, mustard and 3 1/2 cups water (dbl for 4ppl) to the same pot. Bring to a boil over high heat. Cook, stirring often, until stew thickens slightly, 4-5 min. Add beef and any juices (from the large bowl). Stir to combine.

While stew cooks, cut each bun in half. Arrange buns, cut side-up on a baking sheet. Brush each half with 1 tsp oil, then sprinkle over cheese and remaining thyme. Broil in middle of oven, until golden, 2-3 min.

Divide stew between bowls. Serve with Swiss cheese dippers.
