  • Before starting, wash and dry all produce.
  • Peel, then grate half the carrot (use whole carrot for 4 servings).
  • Thinly slice green onions.

  • When hot, add 1/2 tbsp (1 tbsp) oil, then carrot and beef. Cook for 4-5 min, breaking up beef into smaller pieces, until no pink remains.** Season with salt and pepper. 
  • Carefully drain and discard excess fat.

  • To the pan with beef, add Enchilada Spice Blend, garlic puree, tomato sauce base, 1/4 cup (1/2 cup) water and half the green onions. 
  • Cook for 2-3 min, stirring often, until fragrant and sauce thickens slightly. Season with salt and pepper.
Warm tortillas (optional)

  • Wrap tortillas in paper towels. Microwave for 1 min, until tortillas are warm and flexible. (TIP: You can skip this step if you don't want to warm the tortillas!)
Finish and serve

  • Divide tortillas between plates, then top with beef filling.
