Cooking Steps

  • Peel, then grate carrot using a box grater.
  • Thinly slice the green onions.

  • Heat a lage non-stick pan over medium-high heat. When hot, add 1/2 tbsp (1 tbsp) oil, then beef. Cook, breaking up beef into smaller pieces, until no pink remains, 4-5 min.**
  • Carefully drain and discard excess fat.

  • To the pan with with the beef, add Enchilada Spice Blend, tomato sauce base and 1/4 cup (1/2 cup) water.
  • Cook, stirring often, until fragrant and sauce thickens slightly, 2-3 min. Season with salt and pepper.

  • Wrap tortillas in paper towels. Microwave until tortillas are warm and flexible, 1 min. (TIP: You can skip this step if you don't want to warm the tortillas!)

  • Divide tortillas between plates and top with beef mixture.
  • Top tacos with cheese, mild salsa, sour cream and green onions.
