If you've opted to get halloumi, rinse halloumi, then pat dry with paper towels. Cut into 3/4-inch cubes. Sprinkle with half the Indian Spice Mix, then season with pepper.

Add halloumi to the pan. (NOTE: Don't crowd the pan; cook halloumi in 2 batches if needed.) Cook for 3-4 min, turning occasionally, until golden. Follow the rest of the recipe as written.
