Cooking Steps

Cook gnocchi

  • Before starting, wash and dry all produce. Preheat oven to 450°F.
  • In a large non-stick pan, heat half the garlic spread over medium-high. Swirl the pan to melt.
  • When melted, add gnocchi. Cook 7-8 min, turning gnocchi often, until golden. (TIP: Don't crowd the pan; cook gnocchi in 2 batches for 4 servings, dividing garlic spread per batch.)
  • Transfer to a medium bowl and set aside. 
Prep and cook chicken

  • Meanwhile, halve, then peel shallot. Cut into 1/4-inch pieces. 
  • Peel, then mince or grate garlic. 
  • Roughly chop spinach.
  • Prick tomatoes with a fork. 
  • Pat chicken dry with paper towels. Season with salt and pepper. Arrange on an unlined baking sheet. Drizzle 1/2 tbsp (1 tbsp) oil over top. Roast in the middle of the oven for 16-18 min, until golden and cooked through.**
Cook tomatoes

  • To the dry pan, add tomatoes. Cook for 2-3 mins, until blistered. Season with salt and pepper. 
  • Transfer to a plate. 
Begin sauce

  • To the same pan, add remaining garlic spread, then swirl the pan to melt. Add shallots and garlic. Cook 1-2 min, stirring often, until softened and fragrant. 
  • Add crushed tomatoes. Cook 1-2 min, stirring occasionally, until thickened slightly. 
  • Add cream, tomatoes and any liquid from the bowl. Cook for 1-2 min, stirring often, until combined. Season with salt and pepper. Remove the pan from heat. 
Finish and serve

  • Add gnocchi and spinach to the pan with sauce. Stir for 1-2 min, until spinach is wilted and gnocchi is coated. 
  • Divide gnocchi between bowls. 
  • Thinly slice chicken. Top bowls with chicken.
  • Sprinkle with Parmesan. 
  • Sprinkle with chili flakes, if you like.
