Cooking Steps

  • Before starting, remove pizza dough from the fridge and rest in a warm spot for 20 min. 
    Preheat the oven to 450˚F.
    Wash and dry all produce.
  • Add Garlic Spread to a microwaveable bowl. Cook in the microwave for 30 sec, until melted. 
  • Using a silicone brush, grease a muffin tin with half the melted Garlic Spread.
  • Divide dough into 12 equal sized balls.
  • On a lightly floured surface, roll dough out into 12x4 inch rectangle. Cut in half lengthwise, then into 12 equal squares. 
  • Add one sqaure into each greased muffin cup. Set aside.

  • While dough rests, peel, then mince or grate garlic. 
  • Heat a small pot over medium heat. 
  • When hot, add 1/2 tbsp oil, then chopped garlic. Cook for 30 sec, stirring often, until fragrant. 
  • Add marinara. Cook for 1-2 min, stirring often, until warmed through. 
  • Remove from heat and add meatballs. Stir to coat.

  • Spoon one meatball into each of the pizza dough-lined muffin tins. push down lightly into dough.
  • Divide any remaining sauce from the pot equally over each muffin cup 
  • Top with mozzarella and Parmesan. 
  • Brush pizza dough edges with remaining Garlic Spread.
  • Bake, in the middle of the oven, until dough is cooked through, 8-10 min.

  • Set aside for 10 min to coolon a wire rack. Run a sharp knife around the edges of the muffin cups.
  • If serving right away, place meatball cups onto a serving dish. 
  • If serving later, cool meatball cups completely, then transfer to an air-tight container. Refridgerate until ready to serve. 
  • Once ready to serve, pre-heat oven to 350˚F. Arrange cups to a parchment-lined baking sheet. Bake in the middle of the oven, until warmed through,15-18 min.
