Cooking Steps

Cook rice
1
  • Before starting wash and dry all produce.
  • Lightly oil the grill. While you prep, preheat the grill to medium (approx. 400°F).
  • To a medium pot, add 1 1/4 cups (2 1/2 cups) water, 1 tbsp (2 tbsp) butter and 1/8 tsp (1/4 tsp) salt. Cover and bring to a boil over high.
  • Using a strainer, rinse rice until water runs clear.
  • To the boiling water, stir in rice and half the Italian Herb Spice Blend. Reduce heat to low. Cover and cook for 13-15 min, until rice is tender and water is absorbed. Remove from heat. Set aside, still covered.
Prep and make Caesar dressing
2
  • Meanwhile, zest, then juice lemon.
  • Cut tomato into 1/4-inch pieces.
  • Snip one corner of crouton packet. Using a pot or rolling pin, crush croutons into pea-sized crumbs.
  • To a medium bowl, add mayo, Caesar dressing, Parmesan and lemon juice. Season with salt and pepper, stir to combine.
  • To a large bowl, add 2 tbsp (1/4 cup) dressing mixture, tomatoes and spring mix. (NOTE: Do not mix until step 5!)
Prep and grill chicken
3
  • Pat chicken dry with paper towels.
  • Season chicken with salt, pepper and remaining Italian Herb Spice Blend. Drizzle with 1 tsp (2 tsp) oil. Flip to coat.
  • Add chicken to the grill. Reduce heat to medium, close lid and grill for 6-8 min per side, until chicken is cooked through.**
Finish chicken
4
  • When the chicken is done, spread remaining dressing mixture over top, then sprinkle with Cheddar cheese. Close lid and grill for 1-3 min, until cheese melts.
  • Lightly press crouton topping on the tops of chicken, then set aside for 2 min to rest.
Finish and serve
5
  • Fluff rice with fork, stir in lemon zest.
  • Toss salad.
  • Divide rice, salad and chicken between plates.

Customer reviews

Review summary

Updated on Aug 2026
  • Flavour: The chicken and salad were crowd-pleasers, though some reviewers found the rice bland and the overall dish less flavourful than expected.
  • Ease of prep: The recipe comes together quickly and works well on a pan if a lidded grill is unavailable.
  • Suggestions: Consider reducing the lemon juice by half if you prefer a milder flavour, and go easy on added salt since the cheese and dressing already contribute plenty. Stirring lemon zest into the rice can add bitterness for some, so taste as you go.
  • Portions: The salad component left some reviewers wanting more; adding extra greens from your own fridge is an easy way to bulk it up.
