Prep

  • Before starting, wash and dry all produce.
  • Core, then cut pepper into 1/4-inch slices.
  • Thinly slice lettuce. 
  • Zest, then juice half the lime. Cut remaining lime into wedges. 
  • Thinly slice green onions. 
  • Then thinly slice jalapeño into 1/4-inch rounds, removing seeds for less heat. (TIP: We suggest using gloves when prepping jalapeños!)
Pickle jalapeños

  • To a small pot, add 1 tbsp (2 tbsp) lime juice, jalapeños, 2 tbsp (1/4 cup) water and 2 tsp (4 tsp) sugar. Season with salt.
  • Bring to a simmer over medium-high. Cook 1-2 min, stirring often, until sugar dissolves.
  • Remove from heat. Transfer jalapeños, including liquid, to a small bowl.
  • Set aside in the fridge to cool.
Cook beef and peppers

  • Heat a large non-stick pan over medium-high. When hot, add beef and peppers to the dry pan. Cook for 4-5 min, breaking up beef into smaller pieces, until no pink remains.**
  • Carefully drain and discard excess fat.
  • Add Mexican Seasoning and lime zest. Cook for 1 min, stirring often, until fragrant.
  • Season with salt and pepper.
Warm tortillas

  • Just before serving, wrap tortillas in paper towels.
  • Microwave for 30 sec-1 min, until tortillas are warm and flexible. (TIP: You can skip this step if you don't want to warm the tortillas!)
Finish and serve

  • Drain pickled jalapeños. 
  • Arrange beef filling and all of the toppings in small serving bowls and place in the middle of the table.
  • Divide tortillas between plates.
  • Allow everyone to create their tacos however they like, with beef, peppers, pickled jalapeños, cheese, salsa, guacamole, sour cream, lettuce and green onions.

If you've opted to get beef, omit oil, then add beef and peppers to the dry pan. Cook beef in the same way the recipe instructs you to cook the pork.**
