Cooking Steps

Prep

  • Before starting, preheat the oven to 450°F. Bring a large pot of salted water to a boil over high. Wash and dry all produce.
  • Cut cucumber lengthwise, then into 1/4-inch matchsticks.
  • Roughly chop cilantro.
  • Zest, then juice lime.
  • In a medium bowl, whisk together tahini sauce, soy sauce, fish sauce, Moo Shu Spice Blend, 1 tbsp (2 tbsp) lime juice, 1 tsp (2 tsp) lime zest, 1/2 tsp (1 tsp) sugar and 1 1/2 tbsp (3 tbsp) oil. (NOTE: This is your noodle sauce.) To a small bowl, reserve half of noodle sauce. Set aside.
Toast peanuts

  • Heat a large non-stick pan over medium. 
  • When hot, add peanuts to the dry pan. Toast for 4-5 min, stirring often, until golden. (TIP: Keep your eye on them so they don't burn.) 
  • Remove from heat.
  • Transfer to a plate.
Boil and sauce noodles

  • To the boiling water, add rice noodles. Cook for 10-12 min, stirring occasionally, until tender but still slightly chewy to the bite.
  • Drain noodles and rinse under warm water until slightly cool. Return noodle to the pot.
  • When done, add noodle sauce in the medium bowl from step 1, then toss to coat.
Sear steak

  • Meanwhile, pat steaks dry with paper towels. Season with salt and pepper.
  • Reheat the same pan over medium-high.
  • When hot, add 1 tbsp (2 tbsp) oil, then steaks. Cook for 1-2 min per side, until browned. (NOTE: Steaks will finish cooking in step 4.)
  • Remove from heat. To an unlined baking sheet, transfer steaks.
Roast steaks

  • Roast steaks in the top of the oven for 4-7 min, or until cooked to desired doneness.**
  • When steaks are done, transfer to a plate and set aside to rest for 2-3 min.
Finish and serve

  • To the pot with dressed noodles, add carrots, cucumbers, half the cilantro and half the peanuts, then toss to combine.
  • Thinly slice steak.
  • Divide noodles and steak between plates. Top steak with any resting steak juices. 
  • Spoon reserved noodle sauce over top.
  • Sprinkle remaining cilantro and remaining peanuts over top.
