Before starting, preheat your broiler to high and wash and dry all produce.In a large bowl, combine coleslaw, mayo,vinegar and 1 tsp sugar. Season with salt and pepper. Set aside.
Heat a large non-stick pan over medium-high heat. When hot, add 1 tbsp oil, then onions. Cook, stirring occasionally, until softened, 2-3 min. Add Beyond Meat® and BBQ seasoning. Season with salt and pepper. Cook, breaking up Beyond Meat® into smaller pieces, until crispy, 4-5 min.**
Add crushed tomatoes to the pan with Beyond Meat®. Cook, stirring often, until mixture reduces slightly, 2-3 min. Season with salt and pepper.
While chili cooks, halve buns, then arrange them cut-side up on a baking sheet. Spread 1/2 tbsp butter over each half. Broil in middle of oven, until golden-brown, 1-2 min. (TIP: Keep your eye on buns so they don't burn!)
Top buns with Beyond Meat® Chili and loosely crumble some chips over top. Serve slaw alongside.
