Cooking Steps

Prep

  • Before starting, preheat a large pot over medium.
  • Wash and dry produce.
  • Core, then cut pepper into 1/4-inch pieces.
  • Mince or grate garlic.
  • Juice half the lemon (whole lemon for 4 servings). Cut any remaining lemon into wedges.
Cook turkey

  • To the pot, add 1 tbsp (2 tbsp) oil, then turkey. Cook for 3-4 min, breaking up turkey into smaller pieces, until no pink remains.** Season with salt and pepper.
  • Add garlic, peppers and Italian Herb Spice Blend. Cook for 2 min, stirring often, until peppers are tender-crisp.
Cook orzo

  • Add orzo. Cook for 1 min, stirring often.
  • Add tomato sauce base, broth concentrate, pesto, cream and 2 cups (4 cups) water. Bring to a simmer.
  • Once simmering, reduce heat to medium. Cover and cook for 10-12 min, stirring often, until most of the liquid is absorbed and orzo is tender. 
Finish orzo

  • When orzo is done, remove from heat.
  • To the pot, add 1 tbsp (2 tbsp) butter, half the Parmesan, lemon juice and spinach. Season with salt and pepper, then stir to combine.
Finish and serve

  • Divide turkey-orzo mixture between bowls.
  • Sprinkle remaining Parmesan over top.
  • Squeeze a lemon wedge over top.
