Cooking Steps

Start prep
1
  • Before starting, preheat the air fryer to 375°F.
  • Bring a large pot of salted water to a boil
    over high.
  • Cut broccoli into bite-sized florets.
  • Peel, then halve carrot lengthwise. Cut into 1/8-inch-thick half-moons.
  • To a large bowl, add broccoli, carrots, 2 tsp (4 tsp) oil and 2 tbsp water (use the same for 4 servings). Season with salt and pepper. Toss to coat.
  • Transfer veggies to the air fryer basket. Reserve bowl for step 3.
Cook veggies and finish prep
2
  • Air-fry veggies for 7-9 min, stirring halfway, until tender-crisp (NOTE: For 4 servings, cook in 2 batches, using 1/2 tbsp oil and 2 tbsp water per batch.)
  • Meanwhile, peel, then mince or grate garlic.
  • To a small pot (use same for 4 servings), add
2 tbsp (4 tbsp) butter and garlic. Cook for
1-3 over medium, stirring often, until butter melts. Set aside.
Finish veggies and start salmon
3
  • To the reserved bowl, add cooked veggies and half the garlic butter. Stir, then cover to keep warm.
  • Increase the air fryer to 400°F.
  • While air fryer heats, to the pot with remaining garlic butter, add sweet soy sauce and soy sauce. Cook over medium for 1-2 min, stirring often, until simmering. Remove from heat.
  • Pat salmon dry with paper towels. Drizzle
1 tsp (2 tsp) oil over top. Season with salt and pepper. Flip to coat. Add salmon to the air fryer, flesh side down. Air-fry for 2-3 min.
Cook udon noodles
4
  • While salmon cooks, to the boiling water, add udon noodles. Cook for 1-3 min, stirring occasionally and carefully separating udon noodles, until tender but still firm to the bite.
  • Strain and return udon noodles to the same pot, off heat.
  • Stir in veggies, half the sesame seeds and half the soy sauce mixture. Season with salt and pepper. Toss to coat, then cover and set aside.
Finish salmon
5
  • Flip salmon. Spread remaining soy sauce mixture over top. Sprinkle remaining sesame seeds over top.
  • Air fry for 4-5 min until golden and cooked through.**
Finish and serve
6
  • Divide noodles and veggies between bowls.
  • Top with salmon.
  • Spoon any remaining soy sauce mixture over top.
