Cooking Steps

Cook rice and prep turkey

  • Before starting, to a medium pot, add 1 1/4 cups (2 1/2 cups) water and 1/8 tsp (1/4 tsp) salt. Cover and bring to a boil over high. Wash and dry all produce.
  • Using a strainer, rinse rice until water runs clear.
  • To the boiling water, stir in rice, then reduce heat to low. Cover and cook for 13-15 min, until rice is tender and water is absorbed. Remove from heat. Set aside, still covered.
  • While rice cooks, in a large bowl, combine turkey, half the soy sauce and half the Moo Shu Spice Blend (use all for 4 servings).
Prep and make nuoc cham sauce

  • Cut tomato into 1/4-inch pieces.
  • Cut cucumber into 1/8-inch thick rounds.
  • Roughly chop cilantro.
  • Juice half the lime into a large bowl. Cut remaining lime into wedges.
  • To the bowl of lime juice, add nuoc cham, sweet chili sauce and remaining soy sauce.
Cook turkey

  • Heat a large non-stick pan over high.
  • When hot, add turkey mixture to the dry pan. Using the back of a spoon or spatula, flatten turkey mixture until 1/2-inch thick. (NOTE: It's okay if mixture breaks apart slightly.) Fry for 3-4 min, without stirring, until lightly crisp and golden.
  • Using a spatula, flip turkey in large sections. Cook for 2-3 min, breaking up into bite-sized crumbles, until cooked through.**
  • Stir in half the nuoc cham sauce from step 2.
Finish and serve

  • Fluff rice with a fork, then stir in half the cilantro.
  • To the bowl of remaining nuoc cham sauce, add cucumbers, tomatoes and arugula and spinach mix. Toss to coat.
  • Divide rice and salad between plates. Top rice with turkey.
  • Sprinkle crispy shallots and remaining cilantro over top.
  • Squeeze a lime wedge over top.
  • Spoon any remaining sauce from the pan over top.
