Cooking Steps

Cook noodles and prep

  • Before starting, bring a large pot of salted water to a boil (use same for 4 servings).
  • Wash and dry all produce.
  • To the boiling water, add rice noodles. Cook for 10-12 min, stirring occasionally, until tender but still slightly chewy to the bite.
  • Meanwhile, core, then cut peppers into 1/4-inch slices.
  • Peel, then cut half the onion into 1/4-inch slices (whole onion for 4 servings).
  • Remove Thai basil leaves from stems. Tear any larger leaves in half. 
  • In a small bowl, add soy sauce, oyster sauce, sweet chili sauce, chili-garlic sauce and 2 tbsp (4 tbsp) water. Whisk to combine, then set aside. 
Cook veggies and plant-based protein

  • Heat a large non-stick pan over high heat. When hot, add 1/2 tbsp (1 tbsp) oil, then peppers and onions. 
  • Cook for 2-3 min, stirring often, until tender-crisp. Transfer to a plate.
  • Add 1/2 tbsp (1 tbsp) oil to the same pan, then plant-based protein patties and garlic puree. Cook for 5-6 min, breaking up patties into smaller pieces, until crispy.** Season with pepper.
  • Once noodles are tender, strain, then return to the pot.
Finish noodles

  • Add plant-based protein mixture, veggies, sweet chili-oyster sauce and half the Thai basil to pot with noodles. 
  • Return to heat and cook for 1-2 min, stirring constantly, until sauce thickens slightly. Season with pepper. 
Finish and serve

  • Divide noodles between bowls. 
  • Top with remaining Thai basil.

If you've opted to get plant-based protein patties, cook for 5-6 min, in the same way as the beef, breaking up patties into smaller pieces, until crispy.** Disregard instructions to drain excess fat.
