Cooking Steps

Prep

  • Before starting, wash and dry all produce.
  • Core, then cut pepper into 1/4-inch pieces.
Cook sausage and veggies

  • Heat a large pot over medium-high.
  • When hot, add 1/2 tbsp (1 tbsp) oil, then sausage, peppers and mirepoix. Cook for 4-5 min, breaking up sausage into smaller pieces, until no pink remains.** Season with salt and pepper.
Start stew

  • Add crushed tomatoes, chicken stock powder, lentils and their liquid, 1/4 tsp (1/2 tsp) chili flakes and 1/2 cup (1 cup) water. Bring to a simmer.
  • Once simmering, cook for 4-5 min, stirring often, until stew thickens slightly. (TIP: Scrape up any brown bits from the bottom of the pan — this will add extra flavour!)
Finish and serve

  • Divide stew between bowls.
  • Dollop pesto in a circular motion over top.
  • Sprinkle with feta and more chili flakes, if you like.
