Cooking Steps

Cook green beans

  • Before starting, wash and dry all produce.
  • Trim green beans.
  • Heat a large non-stick pan over medium-high.
  • When hot, add green beans, half the Dijon, half the Worchestershire sauce and 1/3 cup (2/3 cup) water. Cook for 4-5 min, stirring occasionally, until water evaporates and green beans are tender-crisp. Season with pepper and half the truffle salt.
  • Add 1 tbsp (2 tbsp) butter. Cook for 30 sec, stirring often, until butter melts.
  • Remove from heat and transfer to a plate.
  • Carefully wipe the pan clean.
Prep and flavour mash

  • Meanwhile, peel, then finely chop shallot.
  • Thinly slice chives.
  • To a large microwave-safe bowl, add mashed potatoes and 2 tbsp (4 tbsp) milk. Season with pepper and remaining truffle salt.
  • Microwave for 3 min, uncovered, until heated through.
  • When heated, stir in chives.
Cook beef

  • Reheat the same pan (from step 1) over high.
  • Meanwhile, using scissors, snip the side of the beef package and drain.
  • Cut the beef slices in half.
  • When the pan is hot, add 1 tbsp (2 tbsp) oil, then shallots. Cook for 1 min, stirring often, until shallots begin to soften.
  • Add beef. Cook for 2 min, flipping occasionally, until beef is cooked through.**
  • Add broth concentrate, remaining Worchestershire sauce, remaining Dijon and 1/2 cup (1 cup) water. Cook for 2-3 min, flipping to coat, until sauce reduces slightly.
Finish and serve

  • Divide truffle mash and green beans between plates.
  • Top truffle mash with beef.
  • Sprinkle crispy shallots over top.
