Prep

  • Before starting, wash and dry all produce.
  • Core, then cut pepper into 1/4-inch pieces. 
Cook Beyond Meat® and veggies

  • Heat a large non-stick pan over medium-high.
  • When the pan is hot, add 1/2 tbsp (1 tbsp) oil, then Beyond Meat®, onions and peppers. Cook for 5-6 min, breaking up patties into smaller pieces, until crispy.**
  • Add Mexican Seasoning. Cook, stirring often, until combined.
  • Remove the pan from heat. Cover to keep warm. 
Cook eggs

  • Meanwhile to a medium bowl, add eggs and 1/4 cup (1/2 cup) milk. Season with salt and pepper, then whisk to combine. 
  • Heat a medium non-stick pan over medium. 
  • When the pan is hot, add 1 tbsp (2 tbsp) butter, then egg mixture. Cook for 2-4 min, stirring often with a spatula, until eggs are fluffy and cooked through.**
Heat tortillas

  • Just before serving, wrap tortillas in paper towels.
  • Microwave for 30 sec-1 min, until tortillas are warm and flexible. (TIP: You can skip this step if you don't want to warm the tortillas!)
Finish and serve

  • Divide tortillas between plates, then top with Beyond Meat® mixture, eggs, chipotle sauce and feta. 
  • Tear cilantro over top.

If you've opted to get Beyond Meat®, cook for 5-6 min, in the same way as the chorizo, breaking up patties into smaller pieces, until crispy.** 

  • Flavor: The chipotle sauce adds great taste, but some suggest doubling it for more impact. Cilantro brings a nice fresh flavour to the dish.
  • Ease of prep: Very quick and simple to prepare, with easy-to-follow directions. The recipe can be easily divided and cooked over two days for single servings.
  • Suggestions: Consider using cheddar or Monterey Jack instead of feta. Try baking the tortillas as an alternative to microwaving for a different texture.
  • Portions: Generous servings provided, with some reporting three full tacos each. A side dish might be a welcome addition for some diners.
