Instructions

  • Heat a large non-stick pan over high heat.
  • While pan heats, core, then cut peppers onto 1/2-inch pieces.
  • Line a baking sheet with foil.
  • Halve sandwich buns. Arrange prepared baking sheet, cut side up.

  • When hot, add 1/2 tbsp (1 tbsp) oil, chorizo, corn and half the peppers. Season with salt and pepper.
  • Cook for 5-6 min, stirring often, until chorizo is cooked and veggies are tender.
  • Remove from heat. Stir in (half?) the BBQ sauce.

  • Top sandwich buns with chorizo mixture and cheese.
  • Broil in the midde of the oven for 3-4 min until cheese melts.
  • Meanwhile, to a large bowl, add vinegar, 1/4 tsp (1/2 tsp) sugar and 1 tbsp (2 tbsp) oil. Season with salt and pepper. Stir to mix.
  • Add spring mix, peppers and carrots. Toss to coat.

  • Divide salads and melts between plates.
  • Drizzle remaining BBQ sauce over melts, if desired.
