Cooking Steps

  • Before starting, lightly oil the grill. While you prep, preheat the grill to medium (approx. 400°F). Wash and dry all produce.
  • To a medium pot, add 2/3 cup (1 1/3 cups) water and stock powder. Season with salt and bring to a boil over high.
    Once boiling, stir in couscous. Remove the pot from heat, then cover and set couscous aside for 5 min to rehydrate

  • Zest and halve the lemon.
  • Thinly slice cucumber.
  • Cut tomato into 1/4-inch pieces.
  • To a medium bowl, add tomatoes, cucumber, and 1 tsp (2 tsp) oil. Season with salt and pepper. Toss to coat.
  • In a small bowl, combine hummus and half the pesto.

  • Pat chicken dry with paper towels. To a shallow dish, add chicken, Shawarma Spice Blend, lemon zest, remaining pesto and 1 tsp (2 tsp) oil. Season with salt and pepper. Flip to coat.
  • Add lemon halves to one side of the grill. Close lid and grill for 3-4 min, flipping halfway until lightly charred.
  • Add chicken to other side of the grill. Reduce heat to medium, close lid and grill for 2-4 min per side until chicken is cooked through.**

  • Fluff couscous with a fork. Squeeze juice from half a grilled lemon into couscous. Stir to combine.
  • Divide couscous, chicken and veggies between plates.
  • Drizzle yogurt saue over chicken.
  • Spoon hummus overtop.
  • Squeeze jucie from remaining grilled lemon, if desired.
