Cooking Steps

Cut and roast potatoes

  • Before starting, preheat the oven to 450˚F. Wash and dry all produce.
  • Remove any brown spots from potatoes, then cut into 1/4-inch rounds.
  • To a parchment-lined baking sheet, add potatoes, half the Applewood Smoke Spice and 1 tbsp (2 tbsp) oil. (NOTE: For 4 servings, use 2 baking sheets, with 1 tbsp oil per sheet.) Season with salt and pepper, then toss to coat.
  • Roast in the middle of the oven for 22-25 min, flipping halfway, until tender and golden. (NOTE: For 4 servings, roast in the middle and top of the oven, rotating sheets halfway through.)
Prep and cook veggies

  • Heat a large non-stick pan over high.
  • While pan heats, core, then cut pepper into 1/4-inch pieces.
  • When the pan is hot, add 1 tbsp (2 tbsp) oil, peppers and mirepoix. Cook for 2-4 min, stirring often, until tender crisp.
  • Transfer veggies to a medium bowl.
Cook beef and pork mix

  • Reheat the same pan over medium-high.
  • When hot, add beef and pork mix to the dry pan.
  • Cook 4-5 min, breaking up meat into smaller pieces, until no pink remains.** 
  • Add veggies, tomato sauce base, broth concentrate, half the honey, remaining Applewood Smoke Spice and 2 tbsp (1/4 cup) water. Season with salt and pepper. Cook for 1-2 min, stirring often, until fragrant. 
  • Remove from heat.
Make dip and prep lettuce

  • To a small bowl, add mayo, mustard and remaining honey. Season with salt and pepper. Stir to mix.
  • Remove and discard outer layer of iceberg lettuce. Halve lettuce, then separate 8(16) leaves from the head. (NOTE: Save any remaining lettuce for a future creation!)
Finish and serve

  • Divide potato coins and lettuce leaves between plates, layering lettuce as necessary to create small wraps.
  • Carefully spoon meat mixture into each lettuce wrap.
  • Serve honey-mustard mayo alongside for dipping.
