Cook noodles and edamame

  • Before starting, bring a large pot of salted water to a boil (use same for 4 servings).
  • Preheat the oven to 450°F.
  • Wash and dry all produce.
  • To the boiling water, add edamame. Cook uncovered for 4 min.
  • To the pot with edamame, add noodles. Cook for 1-3 min, stirring occasionally, until noodles are tender.
  • Reserve 1/4 cup (1/2 cup) water. Strain noodles and edamame, then rinse under warm water. Set aside.
Prep and roast salmon

  • Thinly slice green onions.
  • Peel, then mince or grate garlic 
  • Pat salmon dry with paper towels, then season with salt and pepper. 
  • To a parchment-lined baking sheet, add salmon. Sprinkle sesame seeds over the tops and sides of salmon, then pat seeds to adhere. 
  • Roast in the middle of the oven for 10-12 min, until cooked through.** 
Cook veggies

  • Meanwhile, heat a large non-stick pan over medium-high.
  • When hot, add sesame oil. Add coleslaw and garlic to the pan. Cook for 1 min, until warmed through. Season with salt and pepper.
Finish noodles

  • To the pan with veggies, add noodles, edamame, half the soy sauce, teriyaki sauce and reserved noodle cooking water. 
  • Cook for 1-2 min, stirring constantly, until well combined. Season with salt and pepper.
  • Set aside.
Make teriyaki-soy sauce

  • In a small bowl, whisk together remaining soy sauce and honey.
Finish and serve

  • If you like, gently remove and discard salmon skin. 
  • Divide noodles between bowls.
  • Top with sesame-crusted salmon. 
  • Drizzle soy-honey sauce over top.
  • Sprinkle with green onions.
