Cooking Steps

Prep

  • Before starting, bring a large pot of salted water to a boil (use same for 4 servings). 
  • Wash and dry all produce. 
  • Cut bok choy into 1/2-inch pieces. Rinse bok choy leaves to wash away any dirt.
  • Cut green onion whites into 1-inch pieces.
  • Thinly slice remaining green onion.
  • Juice half the lime into a small bowl, then cut remaining lime into wedges. 
  • To the bowl with lime juice, add hoisin sauce, peanut butter, soy sauce, half the sesame oil and 2/3 cup (1 1/3 cups) warm water. Season with salt and pepper, then whisk to combine. Set aside. 
Cook beef

  • Heat a large non-stick pan over medium-high.
  • When hot, add 1 tbsp (2 tbsp) oil, then beef. Cook for 3-4 min, breaking up beef into smaller pieces, until no pink remains.** Season with salt and pepper.
  • Add Moo Shu Spice Blend and green onion whites. Cook for 1-2 min, stirring often, until fragrant and onions are tender-crisp. 
  • Transfer to a medium bowl, then cover to keep warm. 
Cook veggies

  • To the same pan, add remaining sesame oil, then bok choy and carrots. Cook for 2-3 min, stirring occasionally, until tender-crisp. Season with salt and pepper.
Cook noodles and assemble

  • To the boiling water, add noodles. Cook for 1-3 min, stirring occasionally, until tender but still firm to the bite.
  • Strain and rinse noodles with warm water. 
  • Return noodles to the pot, then add veggies and beef mixture.
  • Pour peanut sauce mixture into the pot. Cook for 1 min, stirring constantly, until well combined. 
  • Remove from heat. Season with salt and pepper. 
Finish and serve

  • Divide peanut beef noodles between bowls.
  • Sprinkle with remaining green onions.
  • Squeeze over with a lime, if you like.
