Cooking Steps

Cook rice noodles

  • Before starting, wash and dry all produce. 
  • Bring a large pot of salted water to a boil over high (use the same for 4 servings).
  • To the boiling water, add rice noodles. Cook for 10-12 min, stirring occasionally, until tender but still slightly chewy to the bite.
  • Drain rice noodles and rinse under warm water until slightly cool. Leave in the strainer.
  • Rinse and wipe the pot clean.

  • Meanwhile, thinly slice mushrooms.
  • Trim, then halve snow peas.
  • Thinly slice green onions.
  • Peel, then mince or grate garlic.
  • To a medium bowl, add oyster sauce, garlic, half the soy sauce (use all for 4 servings), 1/2 tbsp (1 tbsp) sugar and 1/4 cup (1/2 cup) water. Stir to combine.
Cook Impossible® patties and veggies

  • Heat the same pot (from step 1) over medium-high.
  • When hot, add 1 tbsp (2 tbsp) oil, then Impossible® patties and 1/2 tbsp (1 tbsp) sugar. Cook for 5-6 min, breaking up patties into smaller pieces, until crispy.** . Season with salt and pepper.
  • Add mushrooms and snow peas. Cook for 3-4 min, stirring often, until veggies are tender.**
Cook eggs

  • Meanwhile, into a microwaveable bowl, crack eggs. Whisk well to combine. Season with salt and pepper.
  • Microwave for 45 sec-1 min, until eggs are cooked through.**
Finish noodles

  • To the pot, add scrambled eggs and noodles. Stir to combine.
  • Add sauce and stir to combine. Season with salt and pepper.
Finish and serve

  • Divide noodles between bowls.
  • Sprinkle green onions over top.
  • Drizzle sriracha over top, if you like.
