Cooking Steps

Prep

  • Before starting, wash and dry all produce.
  • Finely chop chives.
  • Peel, then mince or grate garlic.
Cook sausage and veggies

  • Heat a large pot over medium-high.
  • When hot, add 1/2 tbsp (1 tbsp) oil, then garlic, sausage and mirepoix. Cook for 4-5 min, breaking up sausage into smaller pieces, until no pink remains.**
  • Add white cooking wine. Cook for 1-3 min, until absorbed.
Start sauce

  • To the pot with sausage mixture, add crushed tomatoes, broth concentrate, Zesty Garlic Blend, 3/4 cup (1 1/2 cups) water and 1/4 tsp (1/2 tsp) salt. Stir to combine, then bring to a boil over high.
Cook pasta

  • Once boiling, add penne and reduce heat to medium.
  • Cook for 5-6 min, stirring often, until tender but still firm to the bite. (TIP: If pasta sticks too much, add more water, 1/4 cup at a time. Scrape up any pieces stuck to the bottom of the pot.)
  • Remove from heat.
Finish sauce

  • To the pot, add cream and half the Parmesan. Cook 1-2 min, stirring occasionally, until Parmesan melts. Season with salt and pepper.
Finish and serve

  • Divide penne between bowls. Top with remaining Parmesan.
  • Sprinkle chives over top.
