Cooking Steps

Prep

  • Before starting, wash and dry all produce.
  • Cut tomatoes into 1/4-inch pieces.
  • Peel, then chop shallot into 1/8-inch pieces. 
  • Thinly slice green onions.
  • Peel, then mince or grate garlic.
  • In a medium bowl, combine tomatoes, green onions, half the chopped shallots, 1/4 tsp (1/2 tsp) sugar and 1 tbsp (2 tbsp) oil. Season with salt and pepper. (NOTE: This is your salsa!)
Cook beef

  • Heat a large non-stick pan over medium.
  • When hot, add beef to the dry pan. Cook for 3-5 min, breaking up beef into smaller pieces, until no pink remains.**  
  • Carefully drain and discard excess fat.
  • Add Applewood Smoked Spice. Cook for 1 min, stirring often, until fragrant. Season with salt and pepper. Remove from heat.
  • Using a slotted spoon, transfer beef to a plate, then cover to keep warm.
  • Carefully wipe the pan clean. 
Cook gnocchi

  • Reheat the pan over medium.
  • When the pan is hot, add 1/2 tbsp (1 tbsp) oil and gnocchi. Cook for 7-8 min, turning gnocchi often, until golden. (TIP: Don't crowd the pan; cook gnocchi in 2 batches for 4 servings.) (TIP: If gnocchi are browning too quickly, reduce heat to medium-low.)
  • Transfer gnocchi to another plate.
Start sauce

  • Reduce heat to medium-low.
  • To the pan, add 1/2 tbsp (1 tbsp) oil, then garlic and remaining chopped shallots. Cook for 3-4 min, stirring often, until softened.
  • Sprinkle Cream Sauce Spice Blend over top. Cook for 1 min, stirring often, until fragrant.
Finish sauce

  • Add 1/2 cup (1 cup) milk and 1/3 cup (2/3 cup) water. Bring sauce to a simmer.
  • Once simmering, add cheese and cook for 2-4 min, stirring occasionally, until cheese has fully melted and sauce thickens.
Finish and serve

  • Divide gnocchi between bowls, then top with cheese sauce and beef.
  • Sprinkle salsa and crispy shallots over top.
