Instructions

  • Cut mushrooms into 1/4-inch slices. 
  • Roughly chop the cilantro.

  • Heat a large non-stick pan over medium-high heat. When hot, add half the sesame oil, then mushrooms.
  • Cook, stirring occasionally, until mushrooms soften slightly, 2-3 min.
  • Season with salt and pepper.

  • Add pork to the pan with mushrooms. Cook, breaking up pork into smaller pieces, until no pink remains, 4-5 min.** 
  • Add Moo Shu Spice Blend and garlic puree. Cook, stirring often, until fragrant, 1 min. Season with salt and pepper.
  • Add hoisin, soy sauce and half the coleslaw mix.
  • Cook, stirring often, until cabbage wilts, 2-3 mins.
  • Take pan off the heat.

  • Wrap tortillas in paper towels.
  • Microwave until tortillas are warm and flexible, 1 min. (TIP: You can skip this step if you don't want to warm the tortillas!)

  • In a medium bowl, whisk together rice vinegar, 1/4 tsp (1/2 tsp) sugar and remaining sesame oil. Season with salt and pepper.
  • Add remaining coleslaw mix and cilantro to bowl, then toss to combine.

  • Divide pork mixture and slaw between tortillas.
  • Divide tacos between plates.
