Prep and make chocolate cookie crust

  • Before starting, preheat the oven to 350°F.
  • Grease the base and sides of an 8x8-inch baking tin with 2 tsp oil, then line the base and sides with parchment paper, pressing to adhere.
  • In a small microwave-safe bowl, add 5 tbsp butter. Microwave until melted. 
  • To a medium bowl, add flour, cocoa powder, brown sugar and 1/4 tsp salt, then whisk to combine. Add melted butter, then mix until a crumbly dough forms. 
Make cheesecake batter and bake

  • Transfer dough the prepared pan, then pat into the bottom of the pan. (TIP: Use a flat-bottomed measuring cup or glass to help smooth down the bottom.)
  • Bake in the bottom of the oven for 8-10 min, until dry to the touch.
  • Meanwhile, to a large microwave-safe bowl, add cream cheese. Microwave for 20-30 sec, until softened.
  • Add white sugar to the bowl with the cream cheese, then beat using an electric hand mixer for 1 min, until smooth. Add egg, then beat until smooth. Beat in sour cream.
  • Remove crust from the oven.
Cool cheesecake and start ganache

  • Pour cheesecake mixture over crust, then bake for for 20-22 min in the middle of the oven, until set.
  • Transfer cheesecake to the freezer to cool, 30 min.
  • Once cheesecake is completely cool, to a small pot over medium heat, add heavy cream, chocolate chips, half the honey and 1/8 tsp salt.
  • Heat for 2-3 min, stirring occasionally, until chocolate has melted and mixture is smooth and glossy.
Finish and serve

  • Immediately pour ganache over cooled cheesecake and spread across the surface using the back of a spoon or spatula. Sprinkle flaky salt over top.
  • Transfer cheesecake to the freezer for 2 hr, until set. 
  • To serve, run a sharp knife around the edges of the tin, then gently pull on the parchment paper to remove the cheesecake.
  • Cut into bars using a sharp knife dipped in hot water.
