- Peel, then cut potatoes into 1-inch pieces.
- Add potatoes, 2 tsp salt and enough water to cover (by approx. 1 inch) to a large pot.
- Cover and bring to a boil over high heat.
- Once boiling, reduce heat to medium-high. Simmer uncovered until fork-tender, 12-14 min.
- Meanwhile, peel, then roughly chop garlic.
- Heat a small pot over medium-low heat.
- Add 1 carton cream, garlic and 3 tbsp butter to the pot.
- Steep, stirring occasionally, until butter melts and garlic is tender, 6-9 min.
- When potatoes are fork-tender, drain well and return to the same pot, off heat.
- Roughly mash potatoes, then add steeped cream mixture. Mash again until smooth.
- Season with salt and pepper, to taste.
- Cover mashed potatoes with a lid and keep warm on the back of the stove.
- When ready to serve, transfer mashed potatoes to a large serving bowl.
