Cooking Steps

Cook rice

  • Before starting, preheat the oven to 425°F.
  • Wash and dry all produce.
  • To a medium pot, add 1 1/4 cups (2 1/2 cups) water and 1/8 tsp (1/4 tsp) salt. Cover and bring to a boil over high.
  • Using a strainer, rinse rice until water runs clear.
  • To the boiling water, stir in rice, then reduce heat to low. Cover and cook for 13-15 min, until rice is tender and water is absorbed.
  • Remove from heat. Set aside, still covered.

  • Trim sugar snap peas.
  • Thinly slice green onions.
  • In a small bowl, combine ketchup, half the oyster sauce (use all for 4 servings), 1 tbsp (2 tbsp) water and 1/2 tsp (1 tsp) sugar. (NOTE: This is your katsu sauce!)
Prep patties

  • To a large bowl, add beef, half the Asian Sesame Blend, half the green onions and 1/4 tsp (1/2 tsp) salt. Season with pepper, then combine.
  • Form mixture into 2 (4) 4-inch-wide patties.
  • Add panko to a shallow dish.
  • Brush patties all over with regular mayonnaise, then add to the dish with panko.
  • Flip patties to coat, pressing panko gently to adhere.

  • Heat a large non-stick pan over medium-high.
  • While the pan heats, line a baking sheet with parchment paper.
  • When the pan is hot, add 1 tbsp oil and patties. (NOTE: For 4 servings, cook in 2 batches, using 1 tbsp oil per batch.)
  • Reduce heat to medium. Pan-fry for 2-3 min per side, until golden.
  • Transfer patties to the prepared baking sheet. Roast in the middle of the oven for 4-6 min, until cooked through.**
  • Carefully rinse out the pan.
Cook veggies

  • Reheat the same pan over medium.
  • When hot, add 1 tbsp (2 tbsp) butter. Swirl pan for 30 sec, until butter melts. 
  • Add sugar snap peas. Cook for 1-2 min, stirring often, until tender-crisp
  • Stir in cabbage. Cook for 2-3 min, stirring often, until softened. Season with remaining Asian Sesame Blend, salt and pepper. 
Finish and serve

  • Fluff rice with a fork. Stir in remaining green onions.
  • In another small bowl, combine spicy mayo and wasabi.
  • Divide rice and veggies between bowls.
  • Top with beef patties.
  • Drizzle katsu sauce and drizzle wasabi mayo over top.
  • Serve any remaining katsu sauce on the side for dipping.
