Cooking Steps

Cook rice

  • Before starting, preheat the oven to 450°F. 
    Wash and dry all produce.
  • Reserve 1/4 cup (1/2 cup) coconut milk. Set aside.
  • To a medium pot (large pot for 4 servings), add remaining coconut milk, half the Caribbean Spice Blend and 3/4 cup (1 cup) warm water. Bring to a simmer over high.
  • Using a strainer, rinse rice until water runs clear.
  • Drain and rinse beans.
  • To simmering coconut milk mixture, add rice, beans, 1/2 tsp (1 tsp) sugar and 1/4 tsp (1/2 tsp) salt. Stir, then reduce heat to low. Cover and cook for 18-22 min, until rice is tender and liquid is absorbed.
  • Remove from heat. Set aside, still covered.

  • Meanwhile, thinly slice green onion.
  • Zest, then juice half the lime. Cut remaining lime into wedges.
  • Core, then cut peppers in 1/4-inch pieces.
Cook meatballs

  • Line a baking sheet with parchment paper.
  • To a large bowl, add beef, half the panko (use all for 4 servings) and remaining Caribbean Spice Blend. Season with salt and pepper, then combine. Roll mixture into 8 (16) equal-sized meatballs.
  • On the prepared baking sheet, arrange meatballs. Roast in the middle of the oven for 10-12 min, until golden and cooked through.**
Prep sauce

  • To a small bowl, add jerk sauce, reserved coconut milk, lime juice and 1/4 cup (1/2 cup) water. Whisk to combine.
  • Heat a large non-stick pan over medium. When hot, add 1 tbsp (2 tbsp) oil and peppers. Cook for 4-5 min, stirring occasionally, until golden.
  • Add jerk sauce-coconut mixture. Cook for 3-4 min, stirring often, until sauce is slightly thickened and peppers are tender. Season with salt and pepper.
  • Add meatballs and 1 tbsp (2 tbsp) butter. Stir to combine.
Finish and serve

  • To the rice, add 1 tbsp (2 tbsp) butter, half the green onions and lime zest.
  • Divide rice between bowls.
  • Top with meatballs and veggies.
  • Spoon any remaining sauce from the pan over top.
  • Top with remaining green onions.
  • Squeeze a lime wedge over top.
