Cooking Steps

Cook rice

  • Before starting, preheat the oven to 425°F. Wash and dry all produce.
  • To a medium pot, add 1 1/4 cups (2 1/2 cups) water and 1/8 tsp (1/4 tsp) salt. Cover and bring to a boil over high.
  • Using a strainer, rinse rice until water runs clear.
    To the boiling water, stir in rice, then reduce heat to low.
  • Cover and cook for 13-15 min, until rice is tender and water is absorbed. Remove from heat. Set aside, still covered.

  • Peel, then grate 1/2 tbsp (1 tbsp) ginger.
  • Thinly slice the green onions. 
Make and bake meatballs

  • In a large bowl, combine beef, half the sesame seeds, panko, broth concentrate, ginger and half the garlic puree. Season with salt and pepper. Roll pork mixture into 8 (16) equal sized meatballs.
  • Transfer meatballs to a parchment-lined baking sheet. Bake for 10-12 min in middle of oven until cooked through.**
Cook edamame

  • Heat a large non-stick pan over medium-high. When hot, add 1 tbsp (2 tbsp) butter and edamame. Cook for 4-5 min, stirring often, until tender. Season with salt and pepper.
  • Transfer to a small bowl and cover to stay warm.
Coat meatballs

  • In a small bowl, whisk together soy, sauce, honey, gochujang, remaining garlic puree, 1/4 tsp (1/2 tsp) sugar and 2 tbsp (4 tbsp) warm water. 
  • When edamame is finished, to the same pan, add the small bowl with sauce. Cook 1-2 mins till sauce thickens slightly. 
  • When meatballs are finished, add the meatballs to the pan with sauce. Toss to coat. 
Finish and serve

  • Add 1 tbsp (2tbsp) butter, half the green onions and remaining sesame seeds to the rice. Season with salt, then fluff rice with a fork.
  • Divide rice between bowls, then top with edamame and meatballs. 
  • Spoon any remaing sauce from the bowl over top.
  • Sprinkle with remaining green onions.
