Cooking Steps

Cook potato coins

  • Before starting, preheat the oven to 425°F.
  • Lightly oil the grill. While you prep, preheat the grill to medium (approx. 400°F).
  • Wash and dry all produce.
  • Remove any brown spots from potatoes, then cut into 1/4-inch rounds.
  • To an unlined baking sheet, add potatoes and 1 tbsp oil. (NOTE: For 4 servings, use 2 baking sheets, with 1 tbsp oil per sheet.) Season with half the Zesty Garlic Blend, salt and pepper, then toss to coat.
  • Roast in the middle of the oven for 25-28 min, flipping halfway through, until tender and golden.
Make tourtière sausage

  • Peel, then mince or grate garlic.
  • To a medium bowl, add ground beef, panko, Pumpkin Pie Spice Mix, half the garlic, half the grainy mustard, 1/2 tsp (1 tsp) salt and 1/4 tsp (1/2 tsp) pepper. Mix to combine.
  • Divide mixture into 2 (4) 7-inch sausage shapes and flatten sligthly. Set aside.
Cook bacon

  • Meanwhile, on a parchment-lined baking sheet, arrange bacon in a single layer. 
  • Roast in the bottom of the oven for 10-14 min, until bacon is crisp and cooked through.** Transfer bacon to a paper towel-lined plate to cool.
Make sauce and butter buns

  • To a small bowl, add mayo, remaining grainy mustard and remaining garlic. Season with salt and pepper, then stir to combine.
  • To a small microwave-safe bowl, add 2 tbsp (4 tbsp) butter and microwave for 30 sec, until soft. Add remaining Zesty Garlic Blend, stir to combine.
  • Spread butter on tops and bottoms of sandwich buns.
Grill sausage and toast buns

  • Brush sausages with 1/2 tbsp (1 tbsp) oil. Season with salt.
  • Add sausage to the grill. Close lid and grill sausage for 5-7 min, flipping once, until cooked through.**
  • Place buns buttered-side down on one side of the grill. Close lid and grill over medium heat for 1 min, then flip buns and cook for 1-2 min, until warm.
Finish and serve

  • If desired, warm bacon in the oven for 1 min.
  • Spread half the ketchup on the bottom buns.
  • Top bottom buns with bacon, sausage and remaining ketchup. Close with top buns.
  • Divide potato coins between plates.
  • Serve mustard-mayo dipper on the side.
