  • Reserve 1/4 cup (1/2 cup) pasta water, then strain and return orzo and peas to the same pot, off heat.

  • Meanwhile, heat a large non-stick pan over medium.
  • While the pan heats, drain and rinse shrimp, then pat dry with paper towels.
  • Season with 1/2 tsp (1 tsp) garlic salt and pepper.
  • When the pan is hot, add 1 tbsp (2 tbsp) oil, then peppers.
  • Cook for 2-3 min, stirring often, until softened.
  • Add garlic puree.
  • Cook for 1-2 min, stirring often, until garlic is fragrant.
Make sauce and cook shrimp

  • Add sun-dried tomato pesto, half the Parmesan, 1/4 cup (1/2 cup) reserved pasta water and shrimp to the pan. 
  • Cover with a lid. Cook for 4-5 min, stirring occasionally, until sauce thickens slightly and shrimp is cooked through.**
  • Season with salt and pepper.
Finish and serve

  • To the pot with orzo and peas, add shrimp and sauce. Stir to combine.
  • Divide sun-dried tomato shrimp and orzo between bowls.
  • Sprinkle remaining Parmesan over top.
