  • Drain roasted red peppers.
  • Drain and rinse shrimp.
  • Pat dry with paper towels.
  • Season with 1/4 tsp garlic salt (dbl for 4 ppl) and pepper.
  • Add orzo to the boiling water. Cook uncovered, stirring occasionally, until tender, 10-12 min.
  • Reserve 1/4 cup pasta water (dbl for 4 ppl), then drain and return orzo to the same pot, off heat.
  • Meanwhile, heat a large non-stick pan over medium-high heat.
  • When hot, add 1 tbsp oil (dbl for 4 ppl), then onions and peas.
  • Cook, stirring often, until softened, 2-3 min.
  • Add roasted red pepper and garlic puree.
  • Cook, stirring often, until garlic is fragrant, 1-2 min.
  • Add sun-dried tomato pesto, cream and shrimp to the pan. (DQ: WATER? we have 1/4 cup if needed)
  • Cook, stirring occasionally, until sauce thickens slightly and shrimp is cooked through, 4-5 min.
  • Season with 1/4 tsp garlic salt (dbl for 4 ppl) and pepper.
  • Pour shrimp sauce over orzo in large pot, then stir to combine.
  • Season with salt and pepper, to taste.
  • Divide creamy sun-dried tomato shrimp and orzo between bowls.
  • Sprinkle Parmesan over top.
