Cooking Steps

Prep and cook chicken

  • Before starting, preheat the broiler to high.
  • Wash and dry all produce.
  • Pat chicken dry with paper towels, then cut into 1-inch-wide strips.
  • To a foil-lined baking sheet, add chicken, 1/2 tbsp (1 tbsp) oil and Applewood Smoke Spice. Season with salt and pepper, then toss to coat. Broil in the middle of the oven for 10-12 min, flipping once, until cooked through.**

  • Meanwhile, core, then cut pepper into 1/4-inch pieces.
  • Finely chop chives. 
  • To a small bowl, combine both kinds of cheese. Set aside. 
Assemble and cook flatbreads

  • When chicken is done, to an unlined baking sheet, arrange flatbreads. (NOTE: For 4 servings, use 2 baking sheets.)
  • Spoon half the BBQ sauce over top of flatbreads, spreading evenly. Sprinkle over half the cheese mixture, then top with chicken and remaining cheese mixture. 
  • Sprinkle half the peppers over top. 
  • Broil in the middle of the oven for 2-3 min, until cheese is melted and peppers are tender. (NOTE: For 4 serving, broil one baking sheet at a time.)
Make salad

  • To a large bowl, add spring mix and remaining peppers. 
  • Add half the chives and half the ranch dressing, then toss to combine. Season with salt and pepper. 
Finish and serve

  • Sprinkle remaining chives over flatbreads.
  • Cut flatbreads into quarters. 
  • Divide flatbreads and salad between plates. 
  • Drizzle remaining BBQ sauce over flatbreads. 
  • Serve remaining ranch dressing on the side for dipping.
