Cooking Steps

Prep
1

Before starting, wash and dry all produce. Heat Guide for Step 4 (dbl for 4 ppl): 1/2 tsp mild, 1 tsp medium, 1 1/2 tsp spicy and 2 tsp extra-spicy! Cut bok choy into 1/2-inch pieces. Trim, then halve green beans. Trim snap peas. Core, then cut pepper into 1/4-inch slices. Peel, then cut shallot into 1/4-inch slices. Peel, then mince or grate garlic. Thinly slice green onion.

Cook turkey
2

Heat a large non-stick pan over medium-high heat. When hot, add turkey, then season with salt and pepper. Cook, breaking up turkey into smaller pieces, until no pink remains, 4-5 min.** Transfer to a plate and cover to keep warm.

Cook veggies
3

Heat the same pan over medium high. When hot, add 1 tbsp oil (dbl for 4 ppl), then snap peas, green beans, bok choy, peppers, shallots and garlic. Cook, stirring often, until veggies are tender-crisp, 5-6 min.

Make spicy hoisin sauce
4

While veggies cook, combine hoisin sauce, soy sauce, cornstarch, 3 tbsp water (dbl for 4 ppl) and 1 tsp sriracha in a small bowl. (NOTE: Reference heat guide.)

Finish stir-fry
5

Add turkey and spicy hoisin sauce to the pan with veggies. Reduce heat to medium. Cook until sauce thickens slightly, 2-3 min.

Finish and serve
6

Divide stir-fry between plates. Sprinkle green onions over top.

Review summary

Updated on Feb 2026
  • Flavor: Many enjoyed the tasty sauce, though some found it a bit too sweet; adding more garlic or spice could boost the flavor.
  • Ease of prep: Quick and easy to make, with minimal dishes, though some noted extra prep time for the vegetables.
  • Suggestions: Consider cooking green beans separately for 1-2 minutes before adding other veggies; try adding sesame seeds for crunch.
  • Leftovers: Some found the dish less appealing as leftovers, with vegetables becoming soft after a couple of days in the fridge.
  • Portions: While filling for some, others felt it needed rice or noodles to make a complete meal.
